Wild
Blueberry Jam

Ingredients:
- 8 Cups of Wild Blueberries
- 2 Tablespoons Lemon Juice
Directions:
- 1. Using a towel, dump fresh blueberries on a large soft bath towel, gently roll them as you take out any stems and leaves, the fibers on the towels are a great way of cleaning batches of fresh berries quickly. Wash the berries in clear water. Then crush the berries using a processor or potato masher. Measure out 5 cups of crushed berries.
- 2. Put lemon juice, sugar,
and pectin into a large pot and mix thoroughly. Add fresh crushed
blueberries. Place
pot on stove top, and cook on high, stirring constantly, bring to full
rolling
boil. Let it boil for at least one full minute, don’t forget
to keep stirring
or it will scorch and stick to pan.
- 3. Remove pan from heat,
skim off the foam on top of the berry mixture, and stir thoroughly and
skim the
foam again.
- 4. Pour the berry mixture into hot, sterilized
jars, and
seal. Either with a hot wax seal or if you prefer, use canning jar
lids,
process in boiling water for 10 minutes.
Makes
approximately 7 pints.
