Caribou Chili

Ingredients:
- 2
Pounds Caribou Meat finely chopped or ground
- 3
Tbs. Margarine or Butter
- 1
Onion chopped
- 1/2
Tsp. Onion Power
- 1/2
Tsp. Garlic Powder
- 1/2
Tsp. Sage
- 1/2
Tsp. Black Pepper
- 1
Tsp. Salt
- 2
Cups Tomatoes diced
- 2
Cans Tomato Sauce (16 oz)
- 4
Tbs. Chili Powder
- 3
Jalapenos chopped
- 8
Cups Beans pre-cooked Kidney or Pinto or Both
- 2
Cups Cheese grated
- Sour
Cream
- Picante
Sauce
- Bread
slices or crackers

Directions:
- 1.
Brown Caribou meat using margarine or butter in frying pan
with chopped onions
- 2.
Stir into browning meat onion and garlic powder, sage, black pepper,
salt, chili powder
- 3.
After meat has completely browned stir in tomato sauce, diced
tomatoes, and chopped jalapenos.
- 4.
Cover and let simmer for 10 minutes, stir now and then to prevent
scorching
- 5.
Pour meat sauce into croak pot of pre-cooked beans and let cook on
HIGH for 30 minutes, then on LOW for 1 hour. Stir occasionally (the
longer it slow cooks the better the flavor)
- 6.
Taste test - Add more seasoning to taste.
- 7.
Serve in bowls with dollop of sour cream and picante sauce on top,
topped with grated cheese.
- 8.
Serve with plenty of buttered bread or crackers.
- 9.
Serves 4-5

We always use our large crock pot because Caribou
Chili
tastes
even better the next day.
