Cooking in Alaska
Fireweed
Jelly

Ingredients:
- 10 Cups
of Fireweed Blossoms
- 4 1/2
Cups of Sugar
- 2 Pkgs.
of Pectin
- 1/4 Cup
of Lemon
Juice
- 4 1/2
Cups of Water

Directions:
- Pick
Blossoms, wash with
cool water, measure out 10 cups and dump into large
pot.
- Add
Lemon Juice
- Add
Water
- Bring
to full boil.
Boil for approx 10 minutes.
- When it
has cooked enough the blossoms will turn to a grey
looking color
- Strain
the blossoms
from the liquid, toss blossoms out
- Add the
pectin to
the saved liquid and bring to boil
- Add
sugar and bring
to full boil for about 2 minutes
- Pour
hot liquid
into clean jars and seal with ring jar lids.
- Process
in boiling
water for approx 10 minutes
- Let
cool in water,
remove jars and store for future eating
K's
tip:
It won't hurt to leave a few blossoms in the jelly, it makes
it pretty to look at. and will intrigue the person you choose to give
it to for a gift.
Fireweed jelly tastes wonderful on buttered bread, but even better on pancakes or french toast, or served with ham slices.
