Moose Stew

Ingredients:
- 1/4
Cup of Olive Oil
- 1
Large onion (chopped into chunks)
- 8
Medium potatoes (chop into chunks)
- 6
Carrots (chop into chunks
- 1
cup of peas (frozen or fresh)
- 1
cup of corn (frozen or fresh)
- 4
Large broccoli spears (chopped into chunks)
- 1
Large celery stalk (chopped into chunks)
- 3
Pounds of moose meat (chunked into 1 inch cubes)
- 8
Cups water
- 2
Cloves of garlic (diced)
- 1/4
Tsp. onion powder
- 1/4
Tsp. garlic powder
- 1/4
Tsp. pepper
- 1/4
Tsp. salt
- 1/4
Tsp. sage
- Dash
of oregano
- 1
Bay leaf

Directions:
- 1. Heat
oil in
x-large
cooking pot on medium flame, add chunked moose meet, let cook for about
5 minutes, turning constantly till
evenly
browned.
- 2.
Continually add each of these next ingredients while
stirring, onions, celery, garlic, salt, pepper, garlic and onion
powder, oregano, bay leaf, sage.
After
it is well blended into meat, simmer
for 15
minutes, stir periodically.
- 3.
Add water, bring to full boil, then turn down flame and let simmer
for 30 minutes.
- 4.
Add potatoes, carrots, peas, corn, and broccoli.
- 6.
Taste test and add more salt and spices if needed.
- 5.
Stir periodically while simmering for 20 minutes or until potatoes
and carrots are done.
- 6.
Serve warm, with buttered bread slices.
K's tip:
If
the stew needs to
be thicker, add some cream of rice or instant potatoes.
We always make a big pot because moose stew tastes
even better the next day.
